#Sherryweek postcard – Flor Power
It’s Friday and we can’t celebrate International Sherry Week without a reverential nod to the flor – the veil of yeast that is essential to the production of Fino and Manzanilla. What better day of the week to do so than #FlorFriday. Not only does the flor protect the wine from oxidation, it consumes alcohol and sugar to make the driest wine in the world. The sugar and alcohol are converted into acetaldehyde, the source produce those distinctive flavours of bakery, brine and nuts.
