Sherry – Umami bomb!
It’s a tough life being a sherry taster, apparently. “Taste through the range of sherry styles, from fino to oloroso and cream, and you are subjecting your mouth to an umami bomb of yeasty, oxidized, savory flavors. Multiply that experience by about 60 times in less than three hours.”
